1. Thaw: Remove the pork from its packaging and let it sit at room temperature for 15 minutes to thaw slightly.
2. Pat Dry: Gently pat the pork dry with paper towels to remove any excess moisture.
3. Season: Sprinkle the pork generously with cooking salt, ensuring even coverage.
Roasting:
4. Preheat: Preheat your convection oven or air fryer to 180°C (355°F).
5. First Roast: Place the pork in the preheated oven/air fryer and roast at 175°C (350°F) for 15 minutes.
6. Remove Salt: Carefully remove the pork from the oven/air fryer and gently brush off the excess salt.
7. Second Roast: Return the pork to the oven/air fryer and continue roasting at 175°C (350°F) for another 15 minutes.
8. Crisp the Skin: Increase the oven/air fryer temperature to 250°C (480°F) and roast until the skin becomes crispy and golden brown. This will take about 15-20 minutes, but keep a close eye on it to prevent burning.
