Hae bee hiam is a beloved spicy condiment till crumbly, slightly caramelised and umami. Li Niang Xing famous hae bee hiam cooked using his familys heirloom recipe in jars with his handsome face plastered on them. On top of the usual ingredients, his slightly more atas version includes dried scallops, and the recipe originated from his Peranakan granny. This is the same hae hee hiam used in the ramen and croissant.
