Beef Tendon is essentially connective tissue that connects the muscles to the bones and hence are known to be a tough cut to cook with for many. However, it is collagen-rich and using slow cooked methods, it can achieve a tenderness that of a pork belly. Beef Tendon can also be commonly found as a dish called Suan Bao Niu Jin in Dim Sum restaurants.
